Effect of temperature on production of pectic enzymes with Aspergillus niger in fermentators

The production of depolymerizing and hydrolyzing enzymes capable of converting pectin to monogalacturonic units by A. niger was studied. A medium containing peanut meal with sugar and pectin or 4% pectin alone was used. Submerged fermentation was faster and more productive than surface cultures. Using 10 l stainless fermentors, the optimum temperature and pH of the fermentation process were determined. The enzymes produced were endopectinases which depolymerize pectin, and exopectinases which totally hydrolyze pectin substances to the monogalacturonic stage.
