The possibility of utilizing sodium caseinate as substrate for measuring proteolytic activity of enzyme preparations of microbial origin was studied. Protease activity was measured by two methods using three substrates: industrial casein, Hammarsten's casein and sodium caseinate. The difference in the activity of the enzyme preparations observed with the different substrates was within a permissible error range, amounting to 5.5 plus or minus 0.4%.
