Inhibition of porcine pancreatic amylase by cinnamic acid derivatives with various substitution on the phenyl ring has been studied. Quantitative correlation by regression analysis showed that hydrophobicity of the substituents is important for the inhibitory activity. Ionization studies showed that all the compounds are present in highly ionized form at pH 7.4.
