Iron absorption in the Bantu

Beef liver or spleen labelled with 59Fe was given as part of a porridge meal to 4 Bantu men with haemosiderosis. The meal with liver contained 9.84 and that with spleen 66.4 mg Fe. Absorption of 59Fe was measured by whole-body counting 2 to 4 h after the meal and 10 to 14 days later. The mean percentage absorption was 9.9 and 6.3 after the liver and spleen meals, respectively. Total Fe absorption was 0.99 mg from the liver meal and 4.3 mg from the spleen meal.
