Effects of some inhibitors on the nitrosation of drugs in human gastric juice

Of the inhibitory substances tested, ascorbic acid proved the most effective for pharmocological use. Possible nitrosation-inhibiting effects of some beverages often ingested with food were also examined. The reaction of sodium nitrite (2 mu mol) with 20 ml of 19 different beverages (including milk) in 30 ml gastric juice at pH 2.0 and 37 deg C was determined; decrease in nitrite concn. with time (1, 5, 10, 15 and 20 min) was shown to fluctuate widely.
