Effect of carbohydrate on growth, plasma proteins, and liver enzymes

Rats 1 month old were given for 30 days diets of equal energy and N values and containing different carbohydrate sources. Growth was best with sucrose, next with glucose or fructose alone, then with maize starch alone or a mixture of maize starch, glucose and sucrose, and poorest with a mixture of mannose, glucose and fructose. Differences found in the distribution of plasma proteins included a low albumin:globulin ratio for maize starch; there was no difference in the distribution of plasma lipoproteins. Activities of liver phosphoglucose isomerase and glucose-6-phosphate dehydrogenase rose in rats given the diet with sucrose, glucose and maize starch, sucrose alone, and fructose alone, but not in rats given glucose, fructose and mannose. Liver phosphomannose isomerase activity was similar for all diets; lack of increase with the glucose, fructose and mannose mixture was possibly due to low absorption of mannose. Particularly high triosephosphate isomerase activity was found in rats on fructose alone; in the brain there was little or no change in the enzyme activity.
