Chemical composition of a mixture of single-cell protein obtained from Kluyveromyces fragilis and whey proteins

A mixture of Kluyveromyces fragilis biomass and coagulated whey proteins obtained by fermentation of whole whey had protein (N x 6.25) 50.8, fat 3.9, ash 5.5, carbohydrates 39.8 and nucleic acids 8.7% dry product. It was high in sulphur-containing amino acids and tryptophan, which are usually limiting in yeast biomass. Lysine was lower than expected and was the limiting amino acid. Chemical score of the protein was 91%. A protein isolate with a yield of 80% was obtained from the product. Protein content of the isolate was 75% and nucleic acids were reduced by 90.8%. Cell-wall debris were also reduced.
