Report from Perú--chemical composition and nutritive value of native Andean foods

A plan for promoting the re-evaluation and consumption of native Andean foods is discussed. Objectives of the plan are to estimate the chemical composition and nutritive value of raw and cooked native foods and to provide data for compiling composition tables of cooked foods and evaluating dietary intake of the population. The required plan of action is outlined.
