The arsenic, copper, lead, manganese and zinc contents of daily foods and beverages in Japan and the estimate of their daily intake

Tables give for each of 17 groups of foods the range and mean concentration of each of 5 metals and the daily intakes of foods and metals. Mean concentration ranged between food groups for arsenic from 0.38 mu g/kg in beverages to 580 in seaweeds; copper 0.35 mg/kg in oils and fats to 14 in milk; lead 38.6 mu g/kg in fungus to 667 in seaweeds; manganese 0.11 mg/kg in milk and 0.15 in confectionary to 24.4 in seaweeds, and zinc 0.11 mg/kg in milk to 38.7 in seaweeds. Greatest daily intake from any food group of As was on average 50.6 mu g from fish and shellfish; Cu 779 mu g, Pb 31.9 mu g, Mn 4910 mu g and Zn 3380 mu g from cereals. Metal intakes from different food groups and total daily metal intakes are given also as bar charts. Another table gives intake of each food group and metal percentage of total intake. Mean total daily intakes calculated for national average were of As 111.5 mu g, Cu 3.6 mg, Pb 147.4 mu g, Mn 8.7 mg and Zn 11 mg. Those were within the ranges of intake calculated earlier for all but Zn for the foodstuffs of a daily menu.
