[The correct judgement of yellow beef carcasses poses meat inspection problems involving both diagnosis and evaluation.] Two laboratory tests on beef carcass fat, 2 on serum and 1 on urine from suspect icteric carcasses were compared. Used singly on serum, the indirect van den Bergh and Fouchet tests were found to be most useful, and either of these 2 used together with the indirect van den Bergh test on fat gave results which agreed most closely with a subjective assessment of the marketability of suspect jaundice carcasses after 24 h chilling.
