Coliform bacteria in dairy products of easy spoilage

During 1970-1971, (i) 219 samples from 38 batches of bottled or Polypak packaged pasteurized milk, (ii) 185 samples from 35 batches of yoghurt, (iii) 110 samples of unsalted or salted izvara, and (iv) 39 samples of various processed cheeses were examined. 84% of (i) satisfied the Bulgarian Standard requirements for coli titre [ less than or equal to 10/ml]; 62% of (ii), 34% of (iii) and 87% of (iv) had coli titres of less than or equal to 10/g. Of 589 strains of coliforms isolated, 73% were Escherichia coli, 14% were Citrobacter spp., and 12% were Aerobacter aerogenes; 63% of the E. coli strains were of faecal origin.
