Iron absorption by adults fed mixtures of rice, milk, and wheat flour

Combinations of rice, wheat flour and milk were given in 6 ratios to 7 adults to provide 6.0 g N/day. In addition to the Fe in these components, a constant amount was supplied by mineral supplements as ferrous sulphate and by minor dietary components. Total Fe intake was from 23.1 to 28.7 mg/day. Absorption of Fe was from 7.5 to 25.6%. It was greater when diets contained more rice than when there was a high wheat content; absorption was least when the diet was high in wheat, low in rice and contained no milk. Fe absorption from diets containing milk with different amounts of rice and wheat was intermediate. Fe absorption was influenced significantly by P in the diet. There was no significant change in the blood picture as a result of diet. The results indicate the importance of considering interactions between several nutrients when the composition of the diet is changed.
