The magnesium content of cow's milk

Mg was estimated by a method based on the formation of a fluorescing compound of Mg and 8-hydroxyquinoline in ethanol solution in 692 quarter samples of cow's milk, 930 samples from individual cows and 625 bulk samples, all from the vicinity of Kiel, and 365 samples of pasteurised drinking milk. During the experimental period, from mid-November 1971 to mid-April 1972, the average values for Mg ranged from 11.5 to 13 mg/100 ml, irrespective of the type of milk tested. During the period the concentration fell continuously and uniformly by at most 2 mg/100 ml. It was concluded that amounts of Mg in cow's milk had not altered greatly in spite of changes in agricultural methods. From the average value for Mg, 12.5 mg/100 ml,and the average intake of milk in West Germany, 290 ml/person daily, it was concluded that milk supplied, on average, about 10% of the daily requirements of Mg and all dairy products possibly about 15% at most.
