Prospective Elementary Teachers' Evaluation of Dietary Life Education Program for Improving Their Dietary Life Education, Food Literacy, and Agricultural Literacy

The purpose of this study was to investigate the effect of dietary life education program improving prospective elementary teachers' evaluating scores of dietary life education, food literacy, and agricultural literacy. It was applied to 102 2nd-year students in the course of Practical Arts EducationⅡ during second semester in 2015. It was used to self-report questionnaires for measuring levels of dietary life education, food literacy, and agricultural literacy through pre-post test. It was analyzed by using descriptive statistics and paired sample t- test of PC SPSS package program.The results of this study were as follows. First, it showed a statistically significant improvement between pre-post scores of total dietary life education and 3 sub-areas of an affective domain(attitude-interest), a cognitive domain(knowledge - understanding), a skill area(participation - practice)(p<.05). Secondly, it showed a statistically significant improvement results between pre-post scores of total food literacy and 5 sub-areas of food choices, meal preparation, nutrition management, sustainable eating habits, self-evaluation too(p<.05). Third, it also showed a statistically significant improvement results between pre-post scores of total agricultural literacy and 2 sub-areas of agricultural understanding, ​​agriculture and food(p<.05). Finally, it was qualitatively supported the improvement of dietary life education, food literacy, and agricultural literacy in this study by focusing and classifying their subjective expressions.
