The effects of natural drying taking place spontaneously in a free space without artificial heating and removing drying substance or artificial circulation of the air on the properties of panceratin are followed in the paper. Pancreatin was obtained by means of the precipitation of an aqueous extract of pancreatin with ethanol, washed with acetone and granulated. Since as early as during the drying on the nutsch filter changes in colour occur on the surface and in the cracked places of the filter cake, the samples of dark hard particles, light fragile particles and dust were separately withdrawn after the drying and adapted to the size smaller than 0,07 mra. In all samples proteolytic, amylolytic and triacetinhydrolase activity was determined. The results were calculated for dried substance and statistically evaluated. It was demonstrated that during drying not only a change in the appearance but also in the activity occurred. Neither proteolytic nor triacetin-hydrolase activity of the light particles and dust differed, but the light particles had only 82.82% of the amylolytic activity of the dust. In all types of activity the dark particles had a substantially lower activity in comparison with the dust, their activity being only 72.15% of the proteolytic, 69.02% of the amylolytic and 74.20% of the traicetin-hydrolase activity found in the dust. In the above described method of drying it is necessary to take into consideration marked changes in the substance and the fact that the dried product is not homogeneous and must be for this reason further adapted.
