The growth characteristics of ethanol-assimilating yeasts and their synthesis of B-group vitamins

Strains of yeast attributing to genera Candida and Debaryomyces were isolated from different natural and commercial substrates and peculiarities of their physiology under conditions of continuous cultivation were studied. The ethanol-assimilating strain C. krusei differing in the highest specific growth rate (0.55 h-1) is selected. Optimal conditions of the strain cultivation were pH-4.2, t -32.degree. C, D = 0.30 h-1. It is established that an increase in the dilution rate from 0.1 up to 0.4 h-1 results in a 3.6-fold decrease in the quantity of group B vitamins. A temperature drop from 38 down to 32.degree. C practically has no effect on the content of intracellular vitamins, that is due to thermotolerance of the strain.
