Energy utilization of supplemented cereal diets in human volunteers

For 5 periods of 4 days 5 Pakistani men 30 to 35 years old weighing 60 to 70 kg were given to appetite 3 times daily chapattis made from wheat flour (about 92 to 93%) and groundnut (Arachis hypogaea) (5.5 to 6.5%) meal without or with masur (Lens culinaris) meal about 2.4, mung (Phaseolus aureus) meal about 2 or chickpea (Cicer arietinum) meal about 2%. The 5th diet had wheat flour about 78 and maize starch about 22%. The diets were isonitrogenous. Digestibility of energy of the diets was 93.35, 81.07, 77.87, 89.48 and 92.95%, respectively.
