In a Latin square design experiment of 21-day periods, 4 Ayrshire cows in mid-lactation were fed a basal ration of hay and molassed sugar beet pulp either alone or with added 10% (i) soya bean oil, (ii) palm oil or (iii) tallow. All the fat additions increased the yield of milk fat and reduced the proportion of the C6:0 to C14:0 acids in the milk fat. (i) reduced the content of C16:0 and C16:1 acids and increased that of C18:0 and C18:1. Addition of (ii) increased the C16:0, C16:1 and C18:1 acids, and (iii) reduced the C16:0 and increased the C18:0 and C18:1 acids. The correlation between C18:0 and C18:1 fatty acids in milk fat is discussed.
