The effect of fructose on blood alcohol levels in man

A total of 10 subjects received, after a 5-h fast, alcohol (whisky) 0.5 mol/m2 body surface area and took immediately 200 ml tap-water at room temperature without or with 60 g fructose dissolved in it. The treatments were reversed after 7 days. The greatest blood alcohol concentration attained was significantly lower with fructose. The area under the alcohol concentration-time curve after alcohol with tap-water was significantly greater than that after alcohol plus fructose. From 45 min after treatment blood alcohol concentration was greater without fructose. The time taken to attain peak blood alcohol concentration was not affected by fructose.
