Fluorimetric method of analyzing proteinase activity

A method was developed for the estimation of the proteolytic rate based on the interaction between fluorescamine and .alpha.-amino groups of TCA-soluble peptides produced in the reaction. The technique allowed the use of various proteases and protein substrates. Modification of milk proteins by fluorescamine only slightly influenced the rate of hydrolysis in reactions with pepsin, trypsin and chymotrypsin. The procedure developed may be important in physiological investigations of proteins.
