Stability of some hydrolytic enzymes in gel form

The stability of acid phosphatase (EC 3.1.3.2), .beta.-glucosidase (EC 3.2.1.21), invertase (EC 3.2.1.26) and urease (EC 3.5.1.5) in free soluble form was compared with their stability in gel form, as determined by measuring the Km. .beta.-Glucosidase, though having a semideactivation time comparable to urease, tends to lose activity much faster than urease. The comparison is similar for invertase and acid phosphatase. Except for urease, the stability of the enzymes in gel form is greatly increased. Acid phosphatase maintains its full activity for 9 days. The stability of .beta.-glucosidase increases 20 times and invertase 28 times when in gel form. The increased stability is attributed to the exceptional concentration of the enzyme in the gel stage at the membrane-solution interface.
