Research on the different analytical methods that can be used for the determination of water-soluble vitamin contents in foods (e.g. milk, chocolate, infant foods, cereals) are presented. The methods include liquid chromatography, mass spectrometry and those using immunological techniques and biosensors. The vitamins studied include ascorbic acid and vitamin B complex (biotin, folic acid, pyridoxine, riboflavin, vitamin B12 and pantothenic acid).
