Salmonella enteritidis in eggs stored at room temperature

Preliminary results from studies in which whole hens eggs were experimentally infected in the albumin with a few colony forming units of S. enteritidis are reported. When the eggs were stored at room temperature (20 degrees C), the inoculated bacteria were able to reach the yolk 4 days after infection and then they multiplied rapidly. These events did not occur in refrigerated eggs.
