The physiological value of proteins is based on the extent of the identity between the amino acid pattern of the physiological requirements and that of the food proteins. The primary intention in evaluating these values has been to draw conclusions for a sufficient supply of the organism with proteins. There are, however, several reasons why this target cannot fully be reached. Food proteins are generally characterized by constant values because they are related to a special reference substrate rather than to the variable states of the organism to be supplied. The paper describes the rationale of the basic methods of protein evaluation. The results obtained are discussed as well as the discrepancies they reveal.
