Evidence for the influence of structural and non-structural DNA polymorphisms in genes relevant to lipid metabolism on the responsiveness to dietary fat and cholesterol is reviewed. The following genes are discussed: apolipoprotein genes (APOA1, APOA4, APOC3, APOB, APOE); lipid processing enzyme genes (lipoprotein lipase, cholesteryl ester transfer protein, lecithin-cholesterol acyltransferase);and lipoprotein receptor genes.
