Chicken egg white, colostrum from several species and extracts of grain and potato contained inhibitors against trypsin, alpha -chymotrypsin, some microbial proteinases, ficin and papain. Each of the materials contained several electrophoretically distinguishable inhibitors with different inhibitory spectra. Some seemed to affect pig trypsin but not that from cattle.
