Comparative studies of protein components of hen's egg alpha- and beta-lipovitellins

Hen's egg yolk .alpha.- and .beta.-lipovitellins isolated from 2 different strains of egg yolk, i.e., white Plymouth Rock and white Leghorn eggs, differed in the proportion of .alpha.- and .beta.-lipovitellins. Protein components of .alpha.- and .beta.-lipovitellins were separated by Sephadex G-200 chromatography. .alpha.-Lipovitellin gave 2 fractions, i.e., .alpha.I- and .alpha.II-fractions. Similarly .beta.-lipovitellin gave .beta.I- and .beta.II-fractions. .alpha.I- and .beta.II-Fractions contained several high MW proteins, but .alpha.II- and .beta.II-fractions were single proteins and the MW of each is about 30,000 daltons. These 2 proteins differed in their amino acid composition, and phosphorus and sialic acid contents.
