Polyphenoloxidase (EC 1.14.18.1) preparations from mango peel and green tea leaves were immobilized on various supports such as polyacrylamide gel, DEAE-Sephadex, DEAE-cellulose, collagen, arylamine glass and alkylamine glass. Some of the properties such as optimum temperature and pH, Km, substrate specificity, thermal stability, storage stability and reusability were studied and compared with those of native enzyme. Adsorption on DEAE-Sephadex and entrapment in polyacrylamide gel are satisfactory for immobilizing polyphenoloxidase from mango peel and tea leaves.
