Bile salts and lipids in aqueous intraluminal phase during the digestion of a standard meal in normal man

Intraluminal aqueous solubility of total lipids and free fatty acids was assessed in 13 normal subjects, after ingestion of a homogenized liquid test meal without glucose. Concentrations and percentage solubility of bile salts, total lipids and free fatty acids, in the aqueous phase, were significantly higher in relation to the total phase during the first 30-min period than during the following 2 h when values for these different parameters remained stable. A significant correlation was found between aqueous bile salt and total lipid or free fatty acid concentrations. Addition of 50 g of glucose to the test meal did not significantly increase the intraluminal concentration of bile salts and thus would not change the concentrations of total lipids and free fatty acids in the aqueous phase to any great extent.
