Lipid fraction makeup of Streptococcus lactis strain MGU

The lipid composition of S. lactis strain MSU was studied. The strain contained lipids characteristic of other bacteria. The total lipid content changed during the culture growth from 18% at the early exponential phase to 10% at the stationary phase. Phospholipids amounted to 26.5%, monoglycerides 10%, triglycerides 34.0%, sterols 15.0% and sterol esters 16%. Saturated fatty acids, mainly palmitic and stearic, quantitatively predominated. Palmitoleic and oleic acids predominated among the unsaturated fatty acids. The culture aging was accompanied by a decrease in the content of the fatty acids by 7.3%.
