The influence of dietary mustard oil, rapeseed oil and groundnut oil at the 15% level on the nature of lipids of rat heart was investigated. The rats treated with mustard or rapeseed oil showed a significant increase in the triglyceride content of the heart than that of the groundnut oil fed group after 10 and 20 days of feeding. The cholesterol ester was increased after feeding mustard oil and rapeseed oil for 150 days. Erucic acid was found in large amounts in heart triglycerides and in moderate amounts in cholesterol ester of mustard oil- and rapeseed oil-fed groups of animals. A higher collagen content in the heart of mustard oil- and rapeseed oil-fed rats was observed.
