The strain C. violaceum was isolated from a soft drink of the Tonic Water kind. Identification was done by biochemical tests. Its sensitivity with regard to several chemotherapeutic agents was examined and the production of pigment (violacein) was evaluated on the following substrates: tryptophan, glycerol, mannite, lactose, saccharose and glucose, at temperatures of 25.degree. and 37.degree. C, viability and the capacity to generate the pigment in aqueous foods was observed.
