A method for concentrating plantain leaf extracts by evaporation of foam, produced by aeration, at 55.degree. C is described. The air used must be free of dust and microorganisms. The quality of the plantaglucide met government standards. The new method used less electricity and required less space for equipment and less personnel than the concentration of plantain extracts under vacuum.
