The review of the modem foreign and national publications on application Of modem molecular and DNA -based analysis in food microbiology is given. Most frequently used nucleonic acids-based assays for food borne pathogens, including DNA hybridization, conventional PCR and real-time PCR are listed. TThe basic advantages and lacks of PCR-techniques also problems of their application are stated at the analysis of foods. Necessity of development of criteria and methodology of standardization of diagnostic PCR for the detection of food borne pathogens is shown, with a view of harmonization of genetic methods with existing system of micro biological requirements and control.
