Changes in different protein fractions and their amino acid composition of the endosperm of opaque-2 composite maize, Shakti, during maturation

10 days after pollination of maize cv. Shakti, 79% of the protein recovered was albumin; during further maturation this fraction decreased rapidly accompanied by a corresponding increase in the glutelin fraction. Between 24 and 38 days after pollination both globulin and prolamin showed some increase. Aspartic acid was the major amino acid in all protein fractions but particularly predominated in albumin 10 days after pollination. Glutamic acid, alanine, leucine, serine and arginine showed conspicuous increases in some protein fractions as maturation progressed. Prolamin became high in glutamic acid, alanine, proline and leucine while lysine decreased very markedly; lysine did not show marked variations in the other protein fractions.
