This article describes methods to characterize directly the circulating metabolites as well as methods to synthesize the specific metabolites that may exist in vivo. The methods to analyse and quantify the aglycone forms after the enzymatic hydrolysis of the conjugates are also given. The main sections are: extraction of flavonoids in biological samples; enzymatic hydrolysis of flavonoid conjugates; in vitro conjugation of flavonoids; and chromatographic analysis.
