Protein food mixture for Iran. Acceptability and tolerance in infants and preschool children

Protein food mixture (PFM) based on local foods in Iran had wheat, chickpea and split pea flours 28, 28 and 24% with skimmed milk powder 10, sucrose 9 and vitamins, Ca, Fe, lysine, methionine and vanillin together 1%. It had water 5, protein 20.7, fat 1.8% and energy 420 /100 g. Children, 14 boys and 28 girls aged 7 to 26 months from a Teheran orphanage were fed on a normal diet or the boiled PFM replaced the normal noon and evening meals, at which the protein dishes were served, for 11 weeks.
