Baker's asthma: what remains still unknown about it?

In many countries baker's respiratory allergy is reported as one of the most common occupational diseases. The paper presents epidemiological data on and risk factors of sensitisation to bakery allergens. Different flour allergens, especially those of wheat and soia flour, and (alpha-amylase are also described, and problems occurring most frequently in diagnosing occupational allergy to flour discussed. It is stressed that skin prick tests should be included into the battery of preliminary examinations before starting vocational training.
