A letter responding to Boza et al.'s article in a previous issue, 1994;124:1978-86, concerning the nutritional value and antigenicity of milk protein hydrolysates is presented. The writer concurs with Boza et al.'s conclusion that enzymatic hydrolysis does not notably diminish the nutritional value of milk proteins, but he points out some of the possible problems with the methods used by the authors to evaluate dairy protein quality.
