This nutritional assessment had three purposes: (a) to learn whether nutrient intakes surveyed in the study would contribute to good health, to add to the database of nutrient intakes for different ethnic groups, and (c) to learn whether nutrient intakes differed among blacks, Siouan Indians and whites in the geographic locale of Columbus County, North Carolina. Here, people live in close proximity and work together in rural settings, offices, and shops. Did different dietary practices, if they existed, lead to different nutrient intakes by the three racial groups?
