Trends in coconut production, processing and consumption in India are discussed with particular reference to Kerala. Topics covered include changes in the copra processing industry (including methods of drying coconut for use in the milling industry), demand for branded coconut oil, toddy production, tender coconut consumption, product diversification, development of the coir industry, commercial utilization of other coconut byproducts including coconut oil cake and shell, and markets for coconut wood.
