Mechanism of deacetylation of N-alpha-acetylated proteins

The presence of specific deacetylase activity in mouse liver has been studied employing a newly designed assay procedure to measure the liberated acetate from N-.alpha.-acetylated protein. The results support the three-step mechanism of deacetylation involving protease, acylamino acid releasing enzyme and amino acylase. The properties of the acyl amino acid releasing enzyme appeared to be different as compared to peptidyl hydrolase(s).
