Inorganic elements in foods used in hospital menus

Values are tabulated for 14 minerals in 128 foods and compared with data from Agricultural Handbook No.8 (Abst 215, Vol 35) and from other tables of food composition. Composite diets also were analysed. In individual foods Ca values showed remarkably close agreement with reference data, P varied more and Na and K varied significantly. Greatest agreement in Mg content occurred in meat but values for fresh fruits showed close agreement.
