Determination of histamine in fish by liquid chromatography with post-column reaction and fluorometric detection

The development and validation of a liquid chromatographic system with post-column reaction for the determination of histamine, associated with decomposition, in canned tuna and mahimahi samples is reported. The av. histamine recovery was 98.4% with a relative standard deviation of 2.18%. These results are comparable to those obtained by the official AOAC method.
