Monosodium glutamate (MSG), a commonly used flavor enhancer, inhibited alkaline phosphatases from chicken, pigeon, rat and rabbit intestine besides human placenta and mouse kidney in an uncompetitive manner. Inhibition of alkaline phosphatase by MSG could be a major factor in limiting amount of inorganic phosphate needed for bone ossification and calcification.
