Zinc and copper in self-selected diets

Zinc and copper contents of 132 composites of daily self-selected diets of 22 men and women were estimated by atomic absorption spectrophotometry. Other nutrients were calculated by computer from 14-day dietary records. Average daily intakes were of Zn 8.6, Cu 1.0 mg, protein 84.7, fat 86.9, carbohydrate 235.5 g and energy 2045 kcal. Intakes of Zn and Cu were compared with values reported by other authors and also with current recommended dietary allowances or estimated minimum requirements. The results suggested that self-selected diets which provide adequate amounts of major nutrients do not necessarily guarantee adequate intakes of Zn and Cu.
