Winners in the 1978 Leftovers Recipe Contest are announced. Two foodservice directors won first prize for their Corned Beef Swissburger and Cake Sundae. These appetizing selections and eight of the 25 entries which won second place are pictured. Recipes are provided. The wide variety of leftovers used in the recipes includes beef, fish, vegetables, potatoes, breads, cakes and donuts. Tips for using leftovers are: (1) hold the food at safe temperatures, then refrigerate properly, and (2) use them only once.
