Microbiological quality of pasteurized milk creams manufactured in Venezuela

100 samples of pasteurized cream (with and without added salt) from 11 manufacturers in various regions of Venezuela, were analysed for mesophilic aerobic bacteria, psychrotrophic bacteria, Staphylococcus aureus, coliform bacteria and yeasts/moulds. Microbial counts varied considerably both between samples from the same manufacturer and between manufacturers. 75, 91, 95 and 58% of samples respectively had mesophilic aerobic, coliform, S. aureus and yeast/mould counts that exceeded the national standard of 10 000, 100, 100 and 1000 c.f.u./ml. Psychrotrophic bacterial counts were >106 c.f.u./ml in 48% of samples. Enteropathogenic Escherichia coli were present in samples from 7 manufacturers and included serotypes responsible for gastroenteritis in children under 2 years old in Venezuela; enteropathogenic Salmonella typhimurium and Shigella sonnei were also present in samples from 1 manufacturer each.
