An accessible food preparation laboratory layout for disabled individuals

A food preparation unit suitable for physically disabled students and/or faculty members was designed for a new food laboratory for the Program in Nutrition and Dietetics at the University of Texas Health Science Center at Houston. The unit provides a work area for one student and/or faculty member who occupies a wheelchair and who may need adjustments in heights, widths, and depths of spaces in addition to adjustments in location of equipment to achieve competency in the food laboratory area.
