Lack of correlation between ammonia-like taint and polyamine levels in reindeer meat

Samples of muscle tissue from the dorsal neck region of 29 reindeer which had been transported in lorries before slaughter were analysed quantitatively for putrescine, spermidine and spermine. Taste quality was measured by 2 trained persons who graded the cooked meat for ammonia-like taint. Moderate ammonia-like taint was detected in 2 samples and a weak taint in 7 samples. The putrescine contents varied between not detectable and 18.7 nmol/g meat, while the spermidine contents varied between 6.5 and 68.6 nmol/g meat. The spermine contents varied between 30.3 and 83.0 nmol/g meat. No positive correlation between the intensity of ammonia-like taint and putrescine, spermidine and spermine contents was found.
